Serious Comfort Food

Chef Everett has been determined since we opened to offer a combination of what he refers to as “serious comfort food”. These are dishes, both from the French Bistro tradition and from more American roots, that are designed to highlight the rich, fulfilling flavors of classic dishes. Many of our items are the result of old fashioned, “slow food” techniques that are reminiscent of dishes that have been prepared and served in serious kitchens for generations. Whether you are craving a savory, moist rotisserie chicken or a classic “Steak Frites” with truffle fries, we are thrilled bring these comfort food dishes to your menu.

As all of our dishes are prepared in house, we are easily able to identify dishes and techniques that can accommodate your individual dietary needs. We look forward to the chance to reintroduce our guests to culinary classics that, in our view, will never go out of style!

 
 

 Our Team

David Everett

Executive Chef/Owner

During his 15 years as the Executive Chef of The Dining Room at Ford’s Colony, David Everett earned AAA’s coveted Five Diamond Award for 9 consecutive years and the DiRoNA Award for a decade. In 2004 he made the leap to open Blue Talon Bistro in Merchant Square. Focusing on “Serious Comfort Food”, David offered Williamsburg a modern mix of traditional French classics and All-American favorites that brought a new level of casual dining to downtown Williamsburg.

A few years later David took over the reins of The Trellis from Chef Marcel DeSaulniers, reenergizing and renovating the Williamsburg landmark, bringing updated modern American fare to the visitors on Duke of Gloucester Street. In 2012, he opened DoG Street Pub, renovating a building originally constructed as Williamsburg Community Bank in the 1930’s. Offering a local interpretation of British pub food, DoG Street has quickly received acclaim as one of the leading craft beer specialists in Virginia.

Additional offerings Chef Everett has brought the downtown Williamsburg market including Blackbird Bakery, offering both fresh baked breads and finer pastries seven days/week and, most recently, La Piazza. La Piazza is Chef's interpretation of a modern Italian Bistro -featuring hand made pasta, simple, fresh ingredients and savory, authentic sauces .

Adam Steely

GENERAL MANAGER/OWNER

Adam fell in love with the restaurant business at age 14 when he saw Casablanca for the first time. Heading off to college did nothing to diminish that enthusiasm and, by the time he graduated from UVA he was already working full time in a wine shop and as a sommelier at The Boards Head Inn in Charlottesville. Over the next (let’s not count how many) years, he continued his restaurant career, including a stint at Ponte Vedra Inn & Club, as a manager at Windows on Urbanna Creek (for those who remember it?) and in Richmond as a co-owner with Chef Jimmy Sneed of The Frog and the Redneck. Adam joined Chef Everett at Ford’s Colony in 2000 and managed restaurant operations there until they left to open Blue Talon Bistro. Adam and his bride, Dyana, also recently opened the European styled coffee shop "Illy Caffe" just around the corner on Duke of Gloucester St.

Geri Butler

Bistro Manager

Williamsburg residents have been treated to Geri’s charm and hospitality for a decade and a half at The Trellis before she came to join the management team here at Blue Talon Bistro. You will find Geri most days in our dining room with a smile and a kind word for all – despite her willingness to root for the Redwings and the Tigers from her home state of Michigan. We can all overlook that, can’t we?

Bill Magnusson

Bistro Manager

Bill spent more than 20 years in the Norfolk area, even though his parents lived right here in Williamsburg all that time! We’re glad that we were finally able to lure him here - Bill has been with us more than 7 years and he has a great story for almost every occasion. Feel free to ask Bill anything at all about fishing (his favorite pastime), Colorado (his boyhood home) or Bourbon (enough said…)
